Cycles of Consumption: El Sabroso

Project by Kylie Grimm

El Sabroso, on 37th St, embodies an architecture of metabolism in which eating, labor, and waste intertwine. The first section juxtaposes the digestive tract with an oven, exploring parallel processes of consumption and transformation. The plan captures time and movement, contrasting the rhythms of the lunch counter with the routine acts of loading boxes. The long section traces waste in the food industry, following plastic forks from delivery to disposal. The rendering explores how labor shapes perception of food, from the pristine, plasticy plate photographed by influencers to the leftovers cleaned by the busser. The physical model, a moving conveyor belt, functions as a conceptual device enacting the project’s exploration of consumption, labor, and waste. Lastly, the 1:1 index presents the detritus of my meal, framing the architecture as an enactment of consumption, labor, and disposal.
