The Forest Cellar

The project is a living lab combining red oak (wood waste) and grapes (grape waste) into new wine-making processes and new PSL/OSL processes and materials. It both provides a community crush-pad sustaining the Hudson Valley AVA community and provides new materials and material flows that promote viticultural agroforestry, silviculture, and a culture of making via recycling.
